Lebanese FATTOUSH SALAD in 20 Minutes. Healthy Middle Eastern VEGETABLE SALAD Recipe by Always Yummy
A popular Middle Eastern (Lebanese) vegetable salad is called Fattoush (also Fatoosh). This simple salad, cut into large slices, will amaze you with its spicy dressing and crispy homemade pita chips, which are a great alternative to usual croutons and breadsticks. What we love about this fresh and summery salad is that there are no strict rules! The dressing can be made with just lemon juice, oil, and salt, while the vegetables and herbs can be chosen based on the season and availability.

✅ Fattoush salad ingredients:
• lettuce - 7 oz | 200g
• tomato - 9 oz | 250 g
• fresh cucumber - 7 oz | 200 g
• radish - 5 oz | 150 g
• bell pepper - 3 oz | 100 g
• scallion - 1 oz | 20 g
• parsley - ⅓ oz | 10 g
• fresh cilantro - ⅓ oz | 10 g
• vegetable oil - 3 fl oz | 100 ml
✔︎ Fattoush salad dressing:
• olive oil - 3 tbsp
• lemon juice - 2 tbsp
• pomegranate molasses - 1,5 tsp (optional)
• garlic - 1 clove
• ground sumac - 1 tsp
• dried mint - ½ tsp
• salt - 1 tsp
• ground black pepper - ½ tsp
✔︎ Pita chips:
• pita bread - 5,5 oz | 150 g
• vegetable oil – 3 fl oz | 100 ml
📌 You will need:

* pan
* bowl
📙 Preparation:
1. Cut the pita into small triangles or strips.
2. Heat 3 fl oz | 100 ml of vegetable oil in a pan over medium heat. Fry the pita pieces on each side till golden crust.
3. Cut the lettuce, tomatoes, cucumbers, radish and bell peppers into large pieces and lay them into a bowl. Chop up the scallion, parsley and cilantro.
4. Mince the garlic and mix it with sumac, dried mint, salt, ground black pepper, lemon juice, olive oil and pomegranate molasses in a bowl.
5. Add the dressing to the veggies and greens, toss and serve right away.
6. Before serving, strew the Fattoush salad with the fried pita chips.
Advices:
1. Use your choice of lettuce leaves: romaine, iceberg, spinach, or any other.
2. You can add spicy peppers to the salad according to your preference.
3. Green onions can be replaced or added to with red or white onions.
4. Pita bread can be substituted with tortillas wraps, croutons or bread.
5. You can prepare the pita bread on a dry skillet, drizzling with olive oil, over medium heat, or in the oven at 170-180°C for 5-8 minutes.
